Over the past couple of months, I have found myself back in the kitchen and actually enjoying cooking. It is interesting to me because cooking was often something I dreaded doing; however, over recent weeks, I have found delicious, yet easy recipes to make that are helping me dread this task less. Knowing that this may not be something that sticks around for too long, here is volume 1 of what I have been cooking recently during these chiller nights.

Half-Baked Harvest One-Pot Sun-Dried Tomato Pasta with Whipped Ricotta

One pot. Pasta. Whipped ricotta. Do I need to say more? I am not a huge sun-dried tomato fan the way that David is and I still love this dish. Ready in 30 minutes and full of flavor.

While it may go without saying, I am going to risk being repetitive and tell you that buffalo chicken wraps are one of my favorite foods. I love this take on them because of the crispy cheese edges.
Modern Farmhouse Eats Baked Lemon Butter Chicken Meatballs with Creamy Spinach Orzo

This dish was so delicious and I loved that it was a little bit different than things we normally cook. It still took a little under 45 minutes from start to finish and the orzo and spinach were a nice touch!
Half-Baked Harvest Easy Spicy Broccoli Cheddar Potato Soup

I had a bunch of leftover broccoli and potatoes from another meal I had made and when I saw this, I knew it was going to be a good one! I love broccoli cheddar soup and adding the potatoes in was a great option. I was happy that David enjoyed it, too!

I wanted to change up our normal soup routine, linked below, and use up some pantry items and this really hit the mark! It was the perfect comfort soup on a really chilly evening!

This may just be my favorite out of the whole list. It is so darn good and so easy! We make half the recipe and it still leaves us with some leftovers. We serve ours with a side of crusty bread.

I picked this because we had some chicken breasts I needed to get rid of and I love any excuse to use my crockpot. This had a lot of great flavors and was another really good comfort meal that was super easy to prep before my afternoon meetings.

I also really love this recipe and we put it either over brown rice or over tortilla chips to make nachos. It is so easy and good and despite being in the crockpot, doesn’t take all that long. It’s definitely a great recipe if you’re in a pinch or having a busy evening!

Sometimes, if I’m feeling fancy, I’ll actually make the rosemary bacon. Otherwise, regular bacon with fresh rosemary on top makes a slightly easier option.

This soup is one my go-to soups and I typically season it just a little more than what the recipe calls for. My go-to seasoning for this soup in particular is Trader Joe’s Everything But The Leftover seasonings. It is such a flavorful, filling soup that is so easy to make thanks to a crockpot.
