One of my favorite comfort food meals is poppy seed chicken. Every year for my birthday, my mom would make this as the main dish with all my favorite sides to go along with it. Now, it’s become a staple in our home as well. It is a quick, easy meal that is delicious and makes great leftovers.

*1 package chicken breast cooked & cubed (4-5 breasts, or more depending on how many you are cooking for)
*1 8 ounce container of sour cream
*2 tablespoons poppy seeds
*1 can cream of chicken soup
*1 stick of melted margarine
*1 package crumbled crackers ( I used Ritz)
Mix cubed chicken, cream of chicken soup, and sour cream together and spread in a casserole dish.
Mix margarine, poppy seeds, and crushed crackers together in a separate bowl. Mix well. Pour on top of chicken mixture.
Cook at 350 degress for 30-35 minutes or until bubbly.
