Now that summer is officially here, I am excited to share some of my favorites from the season. Last week, I shared my favorite statement earrings and nail polish colors. To kick off this week, I am sharing some of my favorite summer lunch recipes. I find myself reaching for things with fresh ingredients, that are not heavy because of the 90+ degree temperatures. I am a big creature of habit when it comes to lunches. I really like things with avocado, Feta cheese, and bacon. I also like things that are easy to eat on the go. I sometimes am bad about finding time to eat throughout the day if I take things that need to be heated up. This is mainly because my job has me in new locations sometimes, so it is much easier for me to have things that can be refrigerated but do not need heating up.

Veggie Burger Wrap
- Morningstar Spicy Black Bean Burger
- Sun-dried Tomato Wrap
- Cilantro & Jalapeno Hummus (I love this flavor from Trader Joe’s)
- Shredded Pepper Jack Cheese
I heat the black bean burger patty according to instructions. I spread the hummus on the wrap, cut the patty and add that with the toppings to the hummus. Cut in half and then wrap in foil. It is the perfect lunch if I’m on the go in the car between sites.
