I saw this recipe on Pinterest and decided to try it out over break because I wasn’t sure how time consuming it may be! It was really just as simple as the recipe stated it would be and ever bit of delicious.
Ingredients:
- 12 ounces linguine
- 2 tablespoons olive oil
- 2 cloves garlic (minced)
- 1 onion (diced)
- 1/2 cup milk (I used whole milk)
- 1/2 cup heavy whipping cream
- 4 ounces of crumbled goat cheese (I used a generous amount of goat cheese… so closer to 6 ounces)
- 1/2 cup freshly grated Parmesan cheese (leave extra for garnish)
- 1 12 ounce jar of roasted red peppers, chopped (I chopped mine in my food processor)
- Kosher salt & freshly ground pepper
*I added oregano to mine after all was cooked.
Instructions:
1. In a large pot, boil water with salt and olive oil. Cook pasta according to the package instructions. Drain water.
2. Heat olive oil in a medium-sized sauce pan over medium heat. Add garlic and onion, and cook. Stir frequently until the onions are translucent, so for about 2-3 minutes. Stir in milk, heavy cream, goat cheese, and Parmesan and cook until the cheeses are melted. That will take about 1-2 minutes. Add red pepper and puree with an immersion blender (I did this prior by using my food processor). Stir in pasta and toss to combine. Add salt and pepper for taste.
3. Serve immediately. Here is where I added oregano; but I bet it would taste great with fresh parsley. I also added additional Parmesan cheese.
