Over the past two years, our roles in our household have shifted, and David has taken over more of the cooking because he is really good at it. But since quarantine, I have taken some time to get back into the kitchen and try some new recipes that have been on my list for a while. Bolognese Parpadelle


I wanted to take the time to really simmer a bolognese sauce but always worried that it wouldn’t have enough time to really get the flavors. I used Jessica’s recipe and made it a few times when it was still chilly outside. I highly recommend trying this and was really pleased with how well it turned out! I would say that it would be important to prep in advance to save some time when simmering the sauce. 5/5 Stars
Chicken Kabobs with Garlic Lemon Yogurt

Mediterranean menus are some of my favorite, so when I saw this recipe for chicken kabobs with garlic lemon yogurt, I knew I would have to try it! The garlic lemon yogurt is delicious, but it would also be great to have with hummus, too. 5/5 Stars
Coconut Flour Banana Bread
One of my favorite Instagram accounts is Eating Bird Food and I saw a recipe for her coconut flour banana bread come across my feed. I normally make skinny chocolate chip banana muffins so I figured this recipe would be a piece of cake, but it didn’t really come out that great. The flavor was good, but the texture was definitely off. 2.5/5 Stars
Twice Baked Potatoes
My friend, Kayte, posted about her tips for getting the perfect twice baked potatoes. I’ve long been a fan, but honestly, couldn’t remember the last time I had one. Here are her tips: Pierce all over with a fork, rub with olive oil and coarse sea salt, place directly on the rack (no foil) and bake at 400 degrees about an hour. Scoop out the potato, mix with butter, milk (or sour cream), freshly minced garlic, a little ranch seasons, sea salt and pepper, and add back to the skins and top with grated unexpected cheddar. Bake for an additional 15-20 minutes at 350 degrees. 5/5 Stars
Chicken Stir Fry

I think one of the hardest parts of quarantine has been not getting to go to favorite recipes and try new things. David has recently started enjoying different dishes, so stir fry has been one of the newest ones in our weekly meal rotation. It’s quick, packed with flavor, and relatively healthy. I hope to continue to expand his palette to make a pad Thai, too! 4/5 Stars
Greek Turkey Burgers with Tzatziki Sauce

David and I aren’t big on eating red meat, so these turkey burgers are a delicious light option! The Tzatziki sauce is so tangy and makes for the perfect summer option. We ate this with a side of quinoa and hummus. 5/5 Stars
Sweet and Sour Pork Skewers with Pineapple

I wasn’t quite sure what to think about this, but David really wanted to try this recipe. I’d have to say that I was pleasantly surprised with the flavors and how light this meal was on a particularly humid and hot evening. It’s delicious served with orzo or zucchini chips.5/5 Stars
