This grilled chicken and bacon homemade pizza recipe from Diary of a Recipe Collector has been a huge favorite of ours since I pinned it back in the spring. It is an easy recipe to whip up, and it makes enough for me to have leftovers at work the next day.
Ingredients:
- 2 chicken breasts
- 6 slices of bacon
- pizza dough (we use wheat)
- salt & pepper
- 2 tbsp butter
- 1 tbsp olive oil
- 4 cloves chopped garlic
- 1 chopped shallot
- 2 tbsp flour
- 1/4 cup wine, beer, or chicken broth (I’ve made it all three ways, and don’t have a favorite)
- 3/4 cup milk
- 1/2 tsp dried basil
- 1 cup colby jack cheese
- 7 slices mozzarella cheese
Directions:
- Preheat oven to 450.
- Line a small pan with parchment paper. Place bacon slices on parchment and cook for 10-15 minutes or until crispy. Don’t forget to remove immediately from the pan so it won’t continue to cook.
- Season & grill chicken. Set aside to cool. (I’ve also used rotisserie chicken & the precooked chicken strips).
- For the sauce: In a skillet, melt the butter and oil together. Add garlic and shallot. Cook for 2 minutes. Add flour & cook for 1-2 minutes while stirring frequently. Add wine (beer, or broth) and stir. Add milk slowly and stir. Season to taste. Add basil. Stir and cook for 2 more minutes over medium heat. Remove from heat.
- Spread pizza dough onto pizza stone. Prick with a fork all over to prevent the dough from sticking. Spread sauce over dough. Top with chicken, bacon, shredded colby jack cheese, and sliced mozzarella.
- Bake at 450 for 15 minutes.
Try adding spinach or using different types of cheeses (we like Parmesan, too).
