David took over the majority of the cooking during the summer, which was a nice little reprieve for me. However, I am back in the kitchen and have been enjoying the process of cooking still. I am still looking for recipes that are relatively easy to make or prep in advance, and those types of recipes have made a world of difference for us on busy weeknights. Here is volume 2 of what I’ve been cooking recently, featuring 10 recipes that we have enjoyed in our weekly meal plan.

30 Minute One Pan Creamy Chicken Orzo

This recipe has veggies with delicious flavor and makes cleanup easy by being one pan. The leftovers were great as well! It is a nice little comfort meal, even when it is warm out!
Greek Chicken Bowls with Tahini Feta Sauce

Making bowls is an easy way of letting each of us add ingredients we like. David is a tad bit pickier than me, so this gives him a way of leaving out the ingredients that he may not be interested in including in his dish. I also love all things Mediterranean so this flavorful dish is delightful! The leftovers make an easy lunch the next day, too!
Easy Sheet Pan Tomato Herb Pizza

The first time we made this, I had an abundance of cherry tomatoes and basil, which is why I picked the recipe to try at that time. We’ve made it since using crushed tomatoes, which can make it a tad easier on a busier evening. There are never any leftovers of this one!
Creamy Roasted Tomato Ricotta Pasta with Crispy Prosciutto

This is another recipe that I picked because of the abundance of cherry tomatoes we had at the time. I have changed up the pasta and my favorite is the shortcut pasta.

I used the leftover prosciutto from the previous menu to make this later in the week. I had never had chicken florentine before but my goodness have I been missing out! Delicious and easy!

This dish is so many of my favorite things rolled into one! Heirloom tomatoes! Gouda cheese! Bacon! All easy to make. I prepped this in the morning and had David put it in the oven when I was driving home from working out. I will definitely be making this again while there are still ripe heirloom tomatoes available.
Spinach Ricotta Stuffed Shells with Basil Vodka Sauce

I cannot stop raving about this dish! I love stuffed shells so much and this one is just really delicious. I am hoping to find some time to make vodka sauce to keep on hand. I bought this one and it was a great option! I found it at our local Harris Teeter, but it is also available at larger retailers like Target.
6 Ingredient Creamy Roasted Tomato Soup

I made this soup for a cozy, storming evening at home with grilled cheeses, and my goodness was it good! I think the addition of basil pesto was the difference in some of my other attempts at making this version. I made a big enough batch to have some leftovers and I have been really pleased with that decision.
Souper Creamy Lemon Butter Cheesy Zucchini Orzo

I was looking for zucchini recipes since I had a few left over from our garden haul and this one stood out to me. The fact that it has summer flavors but is a little soupy? Sign me up! I also crave anything with lemon and lots of herbs in the summer, so this one hit the mark nicely.

Another recipe that I found when I was looking for ways to use up our zucchini and basil. It is low-effort and hearty, perfect for some of the cooler temperatures we have coming up soon!
