About 2 years ago, a friend of mine introduced me to Annie’s Eats for recipes. Some of her recipes are a little more difficult that my expertise would allow for but my favorite recipe from her site is the recipe for Chicken Tequila Burgers.
Here are the ingredients for the original recipe with my substitutions in italics.
Ingredients
2 cloves of garlic, chopped
1/2-1 jalapeno pepper, seeded and chopped
2 chicken breasts (I buy 1 pound of ground chicken)
3-4 teaspoons of cilantro (I sometimes forget to include this)
1/2 chopped onion
Zest of 1/2 lime
1 ounce of tequila
Dash of Soy Sauce (I actually use Worcestershire sauce instead)
Kosher Salt & ground black pepper
Kosher Salt & ground black pepper
1/2 cup panko crumbs (Sometimes I add more to make sure they stay together)
Directions from Annie’s Eats:
Preheat the broiler. Line a baking sheet with tin foil and brush with olive oil. Combine the garlic, jalapeno, chicken breasts, cilantro, lime zest, and onion in a food processor. Pulse several times until chicken is uniformly ground. Mix in the tequila, soy sauce, salt and pepper to taste, and panko. Pulse a few more times until the ingredients are well blended.
Since I use ground chicken, I chop the veggies and mix them in a bowl with the ground chicken, tequila, soy sauce (or Worcestershire), salt and pepper, and panko. Depending on time, I use my food processor to chop the veggies.
Form the mixture into 4-5 patties and place them on the prepared baking sheet. Broil the burgers for about 12-15 minutes, flipping halfway through cooking to brown both sides. Check for doneness before serving.
DG and I actually grill our burgers. I do use tin foil because the burgers are a little fragile in the beginning. So, brush the tin foil with olive oil and flip halfway through.
Serve on buns with onion and bell pepper or lettuce and tomato.
I like to add spicy mustard to mine; DG likes to melt pepper jack cheese to his.
My dad was really nervous about trying these burgers while we were on vacation, but he ended up being surprisingly pleased with how they turned out. Let me know what you think!
