When I saw this recipe in Southern Living, I immediately added it to our weekly meal plan. Â It is seriously delicious, and even easier to make, which are two things I look for in recipes.
Ingredients:
- 1 yellow onion, cut into wedges
- 1 Granny Smith apple, cut into wedges
- 6 garlic cloves, smashed
- 4 uncooked bacon slices, chopped
- 1 (4 lb) whole chicken; I used chicken breasts
- 1/2 cup apple cider vinegar
- Kosher salt
- Black pepper
- 2/3 cup mayo
- 1 1/2 tsp. apple cider vinegar
- 1/8 tsp. ground red pepper
- 12 Bibb lettuce
- Toppings: green onion slices, sweet mini pepper slices, spicy pickles
- Garnish: dried crushed red pepper
Directions:
- Place the yellow onion and apple wedges, smashed garlic cloves, and bacon pieces a slow-cooker. Â Add chicken, 1/3 cup apple cider vinegar, and 1/2 cup of water. Â Sprinkle chicken with salt and pepper. Â Cover and cook on LOW for 5-6 hours.
- If you use a whole chicken, remove the chicken from the bone and discard the skin and bones. Â Shred meat. Â Pour cooking liquid through a fine wire-mesh strainer and into a measuring cup. Â Discard solids.
- Let cooking liquid stand for 10 minutes. Â Skim fat and reserve 1/3 cup cooking liquid. Â Toss the remaining cooking liquid with shredded chicken.
- Whisk together mayo, red pepper, reserved 1/3 cup of cooking liquid, and 1 1/2 tsp. vinegar. Â Season with salt and pepper.
- Spoon chicken into lettuce leaves. Â Drizzle with sauce. Â Add toppings. Â Serve immediately.
